Was out side picking fresh strawberries and though of a great bread recipe for too nights supper, so I went over to the raspberry bush and yes I will have fresh berries for dessert along with my Strawberry Bread.

Strawberry Bread

3 eggs
3 cups flour
2 cups sugar
3 tsp. cinnamon
2 cups strawberries
1 tsp. baking soda
1 1/2 cups oil
1 tsp. salt
1 tsp. vanilla

Beat eggs, sugar, berries, oil and vanilla until light and fluffy. Add other ingredients and beat well.
Fill greased and floured pans 1/2 full. Bake at 350º for 1 hour. Makes 2 loafs.

Making it easy on yourself

1-If you heat lemons before squeezing out the juice
you’ll double the amount of juice extracted.

2-Fresh mushrooms: steam in top of double boiler and
they won’t shrivel up

3- To peel a tomato: hold over flame an heat 1 minute, or
pour boiling water over it, skin will strip off easily.

4- To boil potatoes: in less time, remove a strip of skin from
one side, boil, then the rest of skin peels off easily.

5- If your recipe calls for a  greased casserole, spread
your butter on a piece of bread, use it to grease dish,
and then cut it up for buttered crumb topping.

Country Cobbler

This is a great day today. I have now got my first Cook Book on line and it’s for sale. Please take a look at it and give me some feed back, I would love to know what you think. So for all to celebrate let’s make a Cobbler, this is for you.

Country Cobbler

1/2 cup softened butter
1/2 tsp. salt
1 cup sugar
3/4 cup milk
1 cup flour
1/2 to 3/4 cup sugar
1 1/2 tsp. baking powder
2 cups berries- blueberries, strawberries, cherries, etc

 

Combine butter, 1 cup sugar, flour, baking powder, salt and milk. Blend well and pour into deep 1 1/2 qtr. casserole dish.
Combine rest of the sugar with your favorite berries. Pour over batter. Bake at 375º for 30 to 40 minutes. Makes 6 servings.
The dough rises through the fruit when baking. So it may need extra time to bake.

Fruit Salad

Today is the Lords day of rest, so we will do a simple dish for all to enjoy, go out into the garden and where ever you hide your fruit trees and get the salad fixings. ( I have a marshmallow bush out on the side of the house), so I am good to go. Ha Ha have a great day

Fruit Salad

1 cup diced pineapple
1 cup diced pears
1 cup mandarin oranges
1 cup seedless white grapes
6 maraschino cherries
1/2 cup chopped nuts
1 cup miniature marshmallows
Fruit Salad Dressing

Combine all ingredients, except cherries. Arrange on lettuce leafs, garnish with cherries.
Other fruit may be used. serves 6

1/2 cup syrup from canned peaches
2 egg yolks, well beaten
1 tbsp.  sugar
1/8 tsp.  salt
1 1/2 tsp. lemon juice
1/8 tsp. paprika

Split Pea Soup

Good day all! With the change of weather from spring to summer, we must not forget foods that can keep you warm inside but taste great. Here is a simple recipe that taste great, quick to put together and great for the entire family. Just throw some bread on the table and yes all done.

Split Pea Soup

2 cups dry split peas, 1 lb.
1 1/2 cup chopped onions
2 1/2 qtrs.. water
1 lb. ham hock or meaty ham bones
2 tsp. salt
1 cup chopped celery
1/4 tsp. pepper
1 cup cubed potatoes
1/4 tsp. marjoram
1 cup sliced carrots

Wash peas, combine with water, spices, and ham. Bring to boil, reduce heat and simmer 1 1/2 hour.
Add celery, potatoes, carrots, and simmer 30 minutes more, covered.

Cookie Day

 

Had a great afternoon today and was in such a good mood I baked cookies for my favorite grandson. This was easy and quick and we had fun eating them. Enjoy

Peanut Clusters
2 small bags chocolate chips
2 14oz bags salted peanuts
1 small bag butterscotch chips

Melt Chocolate chips and butterscotch chips in a double oven, over low heat. Pour in peanuts. Mix well. Drop by teaspoonful onto waxed paper. Makes about 40.

Remember to eat with a glass of cow.

Here is something I found and want to share, Standard Rolls is a recipe that upon making you can add different things to make over a dozen different recipes. Like Orange Rolls, Potato Rolls, Hot Cross Buns, Pinwheel Rolls and so many more. So have fun and remember, Breads were a staple to every meal of the day.

Standard Rolls
Milk-scalded, 2 cups shortening (part or all butter),
1/4 cup sugar,
1/4 cup salt,
1 1/2 tsp. compressed yeast,
2 cakes water-lukewarm,
1/4 cup all purpose flour-sifted, 5 to 6 cups

Combine scalded milk, shortening, sugar and salt; cool to lukewarm. Soften yeast in lukewarm water; stir and combine with cooled milk mixture; add about half the flour; beat well. Add enough of the remaining flour to make a soft dough; mix thoroughly...

Morning, as you can tell by now I have not inserted a lot of pictures, remember back in the good old days, cameras were a luxury that most people could not afford. So As you will see in my cook books you will get a lot of recipes, but not a lot of pictures. Also you are getting a lot of facts, history and stories. These will always be there and I love the history of the Midwest living. I am going to try to let the good old day stay alive. Like this recipe from around the 1860’s so please do not try to make this, HA.

Cough Drops

Compound mixture of bloodroot; take of syrup of squill, syrup of Ipecacuanha, tincture of bloodroot and paregoric, each half a fluid ounce; mix. The dose is from half a teaspoon to a teaspoon, whenever the cough is severe.

Summer is here

Guess what all, it is Summer time and time to spent it out doors. In the rain, thunder storms, tornados, high winds and yes the hot weather, Heat, Heat and more Heat. Yesterday was the 7th day of rest. Every buddy got to sleep in, had a great breakfast, off to Church, and then family got together and relaxed for the day. Caught up on the news of the week. But after dinner you sit on the front porch and watch the kids play in the yard and Yes churned the Ice Cream Bucket. It took a long time, and I think this is why they had so many kids, go get the strawberries out of the garden, and yes have strawberry short cake with home made Ice Cream…
