Being the 4th weekend I wanted to make something sweet, just like our country, so here is a simple Lemon Bar recipe. Enjoy

Lemon Bars
Crust:
1 1/3 cup flour
1/3 cup powdered sugar
2/3 cup butter

Melt butter in 9×9 pan. Mix flour and sugar and then mix with butter in pan. Press firmly in pan, bake 20 minutes at 350 degrees.

Filling:
3 eggs
4 Tbs. lemon juice
1 1/3 cup sugar
2 2/3 Tbs. flour
1/3 tsp. salt
2/3 tsp. baking powder

Beat eggs and juice. Sift sugar, flour, baking powder and salt. Mix in eggs. Pour over crust while still hot. Bake at 350 degrees for 25 minutes. Sprinkle with powder sugar. Makes 16 bars.

Country Cobbler

This is a great day today. I have now got my first Cook Book on line and it’s for sale. Please take a look at it and give me some feed back, I would love to know what you think. So for all to celebrate let’s make a Cobbler, this is for you.

Country Cobbler

1/2 cup softened butter
1/2 tsp. salt
1 cup sugar
3/4 cup milk
1 cup flour
1/2 to 3/4 cup sugar
1 1/2 tsp. baking powder
2 cups berries- blueberries, strawberries, cherries, etc

 

Combine butter, 1 cup sugar, flour, baking powder, salt and milk. Blend well and pour into deep 1 1/2 qtr. casserole dish.
Combine rest of the sugar with your favorite berries. Pour over batter. Bake at 375º for 30 to 40 minutes. Makes 6 servings.
The dough rises through the fruit when baking. So it may need extra time to bake.

Cookie Day

 

Had a great afternoon today and was in such a good mood I baked cookies for my favorite grandson. This was easy and quick and we had fun eating them. Enjoy

Peanut Clusters
2 small bags chocolate chips
2 14oz bags salted peanuts
1 small bag butterscotch chips

Melt Chocolate chips and butterscotch chips in a double oven, over low heat. Pour in peanuts. Mix well. Drop by teaspoonful onto waxed paper. Makes about 40.

Remember to eat with a glass of cow.

Summer is here

Guess what all, it is Summer time and time to spent it out doors. In the rain, thunder storms, tornados, high winds and yes the hot weather, Heat, Heat and more Heat. Yesterday was the 7th day of rest. Every buddy got to sleep in, had a great breakfast, off to Church, and then family got together and relaxed for the day. Caught up on the news of the week. But after dinner you sit on the front porch and watch the kids play in the yard and Yes churned the Ice Cream Bucket. It took a long time, and I think this is why they had so many kids, go get the strawberries out of the garden, and yes have strawberry short cake with home made Ice Cream…

Hello All—Today we are looking at Desserts, why, because after every dinner meal there was desserts, for the kids. It was a long day, school, homework, chores and then relaxation with dessert. If I was a kid who back then had no TV, no computer games, and only maybe a radio to lesson to, then dessert was the highlight of the day. Here is something good, quick and you can have on hand for days.

Gingerbread
very old, old recipe

Cream 1/2 cup sugar with 1/2 cup lard,
add 1 cup molasses and Sift dry ingredients-2 1/2 cups flour,
1/2 tsp. each cloves and cinnamon,
1 1/2 tsp. soda,
1 tsp. ginger,
1/4 tsp. salt.

Then add to first mixture, with 1 egg beaten if you have one to spare. Last, add 1 cup boiling water. Bake about 30 minutes in 350 degree over. Use 9×12 inch pan or 2 smaller ones.
